Koltz The Wizard Shiraz
We make the Wizard using another technique from Valpolicella called Ripasso. To do this we take our best estate shiraz and pass it over the skins of the Pagan once the Pagan has been pressed off. This is effectively a partial refermentation over the Pagan skins and hence the Wizard gains some of the intensity and structure of the Pagan.
The Wizard is an intensely fruit driven wine with a firm fine tannin structure and lots of complexity and a luscious long mouthfeel.
